The Cheese Coating Yellow is perfect as an external protective coating for hard and semi-hard cheeses. With the Cheese Coating Yellow we create a protective coating that let the cheese to breathe while protecting it from excessive drying, mold, foreign particles and germs during the ripening process. The Cheese Coating Yellow is used for aging cheeses. The Cheese Coating Yellow can also be applied as a protective layer between cheese and Cheese Wax.

The Cheese Coating Yellow is applied to hard or semi-hard cheeses that have cooled and dried and are ready for the ripening process. The Cheese Coating Yellow is easy to apply without heating. To cover the cheese with the Cheese Coating Yellow just use the Sponge for Application of Cheese Coating. The Cheese Coating Yellow is appropriate for contact with food. The Cheese Coating Yellow must stored closed between 5 - 25 °C, away from direct sunlight. The Cheese Coating Yellow is destroyed if frozen.

How to Coat Hard & Semi-Hard Cheeses

  1. Dip the Sponge for Application of Cheese Coating to the Cheese Coating Yellow.
  2. Apply the Cheese Coating Yellow to the top as well as to the sides of the cheese.
  3. Drying time depends on the temperature and relative humidity in the storage area. It usually takes 24 hours to dry.
  4. After drying, repeat the same procedure on the other side of the cheese.
  5. Depending on cheese type and storage duration, a second and a third layer of Cheese Coating Yellow may be needed. Which usually you can do after a week.
  6. Do not dilute the Cheese Coating Yellow.
  7. If you want to apply Cheese Wax you have to wait to dry the Cheese Coating Yellow.
  8. Use the Cheese Draining & Ripening Racks to store the cheeses during ripening time. Because they are perforated, allow air circulate and this improves and accelerates the maturing process of hard and semi-hard cheeses.
