The Biscuit Machine Marcato is a handy and elegant machine to make homemade biscuits and cookies, quick and easy! Using the Biscuit Machine Marcato you can create 20 different shapes and 2 sizes of biscuits and cookies. The Biscuit Machine Marcato is also known as Cookie Press, Biscuit Press, Biscuit Extruder, Cookie Extruder, Biscuit Maker or as Cookie Maker. However; whatever you call it, we have it!
The Biscuit Machine Marcato has 20 traditional cookie disc shapes. Also, the Biscuit Machine Marcato has an adjustment knob that lets you choose between 2 different biscuit sizes: small to make delicious pastries and big for breakfast biscuits. With the Biscuit Machine Marcato you can make, quick and easy, homemade biscuits and cookies that can be decorated or stuffed as you like, according to your tastes. The Biscuit Machine Marcato is easy to use and with one full cylinder load and by simply pressing the handle you can make 20 - 25 large biscuits or 35 - 40 small biscuits, without any need to cover the baking sheet with parchment paper or butter.
The Biscuit Machine Marcato is made of anodised aluminium alloy, suitable for contact with food and it is coloured using oxidation colouring so that no residue is released onto the dough. The Biscuit Machine Marcato has an ergonomic handle for easy use.

Operation of Biscuit Machine Marcato
- Wash all parts, of the Biscuit Machine Marcato, in warm water with some detergent (Fig. 1).
- Rinse and dry the Biscuit Machine Marcato with a clean cloth (Fig. 2).
- Prepare the dough of your choice (Fig. 3).
- To lift the piston, rotate the knob by 180°C; and pull it upwards until it stops. The rod of piston has teeth, in order to pull the piston upwards the teeth must be opposite to the handle (Fig. 4).
- Unscrew the locking ring (Fig. 5).
- Choose one of the 20 different dies for cookies and biscuits (Fig. 6a).
- Insert the desired die into the locking ring. The raised portion of the die must be facing downwards (Fig. 6b).
- Fill up the cylinder with some of the dough (Fig. 7).
- Fully tighten the locking ring on the cylinder (Fig. 8).
- Choose the size of the biscuits by rotating the adjustment knob in the appropriate position (Fig. 9).
- With the Biscuit Machine Marcato you can choose the size of your biscuits. Turn the knob at position 1 for small biscuits and at position 2 for large biscuits (Fig. 10).
- Turn the knob so tha the racket lever jack meets the teeth of the piston rod.
- Lower the lever a few times until the dough comes out evenly from the die holes.
- Remove and discard this first batch of dough so that the die remains clean
- Place the Biscuit Machine Marcato on the cold oven tray and push the lever down (Fig. 11).
- Do not use baking paper on the tray.
- Lift the lever and move the Biscuit Machine Marcato, ready for another biscuit. (Fig. 12).
- Pre-heat the oven to about 180° C for about 20 minutes (Fig. 13).
- Attention: Always use an oven mitt when handling hot dishes.
- When cooked, remove the tray and let it cool. Then remove the biscuits from the tray and decorate as desired (Fig. 14).
- After use, wash all parts of the machine that have been used with hot water and some detergent. Rinse and dry with a cloth.
- Never wash the Biscuit Machine Marcato by placing it in the dishwasher.
- Reassemble the machine and put it in the box along with accessories.
