What is the Enameled Cast Iron Cookware?

In the case of the cast iron cookware of the factory Lodge the cast iron cookware is produced in the traditional method. Then, a glass particulate called "frit" is applied. This is baked on between 650°C and 760°C, causing the "frit" to be transformed into a smooth porcelain surface and to be bonded to the cast iron.

Basic Tips for cooking with Enameled Cast Iron Dutch Oven - Casserole of Lodge!

  • Wash and Dry very well the enameled cast iron cookware before first use.
  • Heat, always, the enameled cast iron cookware gradually.
  • The porcelain (glass) finish is hard, but can be chipped if banged or dropped.
  • There is no exposed cast iron on your enameled cookware.
  • The Enameled Cast Iron Cookware can be used on gas, electric, ceramic and induction cooktops. Always lift cookware to move.
  • Bake in any oven or on any grill.
  • The heat retention of cast iron and the benefits of porcelain combine to perform many cooking techniques, including sautéing, frying, searing, braising, stewing, roasting, broiling and baking.
  • Enamel or porcelain (glass) surface is resistant to acidic and alkaline foods and can be used to marinate, cook and refrigerate.
  • Do not use the enameled cast iron cookware in microwave ovens, on outdoor grills or over campfires.
  • For added longevity, pre-heat and cool your enameled cast iron cookware gradually.

It is time for cooking!

  • Cast iron has superior heat distribution and retention - evenly heating the bottom and sidewalls of the vessel and across the lid.
  • Use vegetable oil or cooking spray for better cooking and easier cleaning.
  • The low or medium heating of the enameled cast iron when is used for cooking on cooktops provides better taste, because of the natural heat retention of the cast iron. Do not use high heat.
  • For sauté use cast iron skillets. First, heat the cookware until it has medium temperature. Spread on cooking surface and food surface with vegetable oil just before introducing food into the pan.
  • Do not heat an empty Dutch oven or covered casserole.
  • Use wooden, silicon or nylon utensils to stir inside the enameled cast iron cookware. The metal utensils can scratch the porcelain of the enameled cast iron cookware.
  • You can reduce the heat of the burner because the cast iron has the ability to retain the heat. So, the cast iron requires less energy to maintain the required temperature of cooking.
  • When you use the enameled cast iron cookware on a cooktop, use the burner that is nearest in size to the diameter of the pan bottom to avoid hotspots and over-heating of sidewalls and handles.

Caring of your Enameled Cast Iron Cookware!

  • Allow cookware to cool before cleaning.
  • Although is dishwasher safe, hand washing with warm soapy water and a nylon Scrub Brush is recommended to preserve the cookware’s original appearance.
  • If it is necessary, use nylon pads or scrapers to remove food residue; metal pads or utensils will scratch or chip porcelain.
  • Remove slight stains by rubbing with dampened cloth and baking soda. For persistent stains, soak interior of the cookware for 2 to 3 hours with a mixture of 3 tablespoons of household bleach per quart of water.
  • To remove stubborn baked on food, bring to a boil 2 cups of water and 4 tablespoons of baking soda. Boil for a few minutes then use nylon or wood scraper to loosen food.
  • Always dry cookware thoroughly before storage.
  • Loose knobs? Tighten the screw. Be gentle, the enamel is glass!
