Recipe for Homemade Yoghurt

  1. Use whole milk (cow, sheep, goat or mix).
  2. Both the milk and the yoghurt must be full-fat, so that the yoghurt gets a rich, creamy texture.
  3. If you use raw milk you must first filter the milk using a cheesecloth to leave off possible foreign bodies contained in raw milk.
  4. Put the milk in a pan with a thick bottom on the stove and heat over medium heat until reach the 90 °C. If you don not have milk thermometer, boil the milk about 18 - 20 minutes, the milk will start to inflate.
  5. Then remove the pan from the fire and let it cool down. If we have a milk thermometer we should see the milk to cool to 45 °C. Otherwise, we understand that milk has cooled if we dip our finger in milk for 20 seconds and we can keep it without burning.
  6. Prepare the starter yoghurt. The starter yoghurt is a pre-made yoghurt, remaining yoghurt from your previous batch, yeast or culture for yoghurt.
  7. For every liter of milk you will need a full spoonful of starter yogurt. In a small amount of boiled milk, dissolve the starter yoghurt by stirring it well with wire. Then Add the mixture to the pan and mix gently.
  8. The more starter yoghurt you add, the more easily it will thicken the milk, but it will not have a sour taste.
  9. Pout the milk into the Wooden Milk Bucket with Lid & Rope, cover it with a warm blanket and leave it in a warm place for about 8-12 hours until the yoghurt is thicken.
  10. Attention, we do not move or shake the pot during this time.
  11. The yoghurt is ready!
  12. Store the yoghurt in glass jars, clay coccotes or clay pots with lid and keep it in the refrigerator for 10-12 days.
