The Pasta Fresca is made of food-grade ABS and Polycarbonate by the italian company Marcato. The Pasta Fresca is a fast and compact mixer, designed for home-made pasta! The Pasta Fresca kneads bread, pizza and biscuit dough within a few minutes and cuts different pasta shapes thanks to the practical accessories.

The Pasta Fresca is a compact, counter-top, fast and multi-functional mixer with the same result as hand-kneaded! The Pasta Fresca is ideal both for savoury dough for pasta, bread, pizza and for sweet dough for biscuits and cookies. Also, thanks to the three practical accessories for pasta the Pasta Fresca is ideal for pasta sheets and for cutting different pasta shapes.

Pasta Fresca Marcato

The Pasta Fresca is able to process various flour mixes: traditional, wholemeal, gluten free etc always guaranteeing the perfect dough for different uses. The special movement of the mixer blade is ideal for preparing savoury mixtures and to reactivate them after leavening. Also, the Pasta Fresca can knead shortbread and sweet dough requiring a longer processing time than savoury dough.

The Pasta Fresca with the accessories for lasagne (150 mm), fettuccine (6.5 mm) and tagliolini (1.5 mm) allows you to make lasagne and to cut different pasta shapes. Also, you can use the extra accessory for spaghetti (diameter 2 mm) for more pasta shapes and the extra accessory Tacapasta for drying the pasta before cooking it!

Fresh Pasta Recipe with the Pasta Fresca

Ingredients

  • 250g soft-wheat “00” flour.
  • 250g durum wheat flour (semolina).
  • 5 whole eggs and water up to a total of 250g.
  1. Open the lid of Pasta Fresca and pour the ingredients into the bowl of the mixer, starting with the flour.
  2. Make sure the side cap is closed and the LED is off.
  3. Close the lid and turn on the Pasta Fresca by pressing the On/Off switch.
  4. After about 3 minutes, you should have a smooth and firm dough.
  5. Open the lid to remove the dough.

Important

  • The volume of eggs and water must not exceed 250 ml (8.5 fl. oz.).
  • For a better-tasting pasta, use a mixture that is half soft wheat flour and half durum wheat flour (semolina).

Prepare Pasta Sheets with Pasta Fresca

  1. Cut the prepared dough into 4-5 pieces.
  2. Apply the accessory Lasagna (with the smooth rollers) and set the adjustment knob to 0, pulling it outward and rotating it, so that the two smooth rollers are completely open.
  3. Feed a piece of dough through the rollers.
  4. Repeat this step 5-6 times, folding the pasta sheet and, if necessary, adding more flour in the middle.
  5. Cut the obtained pasta sheet into pieces about 25 cm long.

How to cut Fettuccine or Tagliolini with the Pasta Fresca

  1. Fit the selected cutting accessory (Fettuccine or Tagliolini) and start passing the pasta sheet through the rollers to achieve the desired pasta shape.
  2. Pick up the pasta with the special stick and transfer it to the Tacapasta.
  3. The pasta dries in about 5-6 hours, depending on the temperature and humidity.
  4. The pasta can then be stored in suitable kitchen containers.

Pizza Dough Recipe with the Pasta Fresca

Ingredients
  • 2 3/4 cups flour (500 g).
  • 1 1/2 tablespoon fresh brewer’s yeast (15 g).
  • 1/4 cups oil (to taste).
  • 1 teaspoon salt.
  • 1 approximately cup of warm water (250 ml).
  • 1 pinch of sugar.
Pizza Dough Recipe with the Pasta Fresca Marcato
  1. Dissolve the brewer’s yeast in warm water and then add the sugar.
  2. Measure out the flour.
  3. Pour everything into the Pasta Fresca and then add 4 tablespoons of oil.
  4. Close lid and switch the Pasta Fresca On.
  5. After 2 minutes, add the salt and continue to knead for another 4-5 minutes.
  6. Take the dough out, work it into a ball and sprinkle with flour.
  7. Cover it with a clean dish towel and let it rise for 1 hour in a warm spot, away from any drafts.
  8. When it’s done rising, cut the dough into two pieces.
  9. Attach the Roller 220 accessory by Marcato and pass the dough through several times until it reaches the maximum width of the rollers.
  10. Sprinkle with flour as needed to obtain a soft, smooth dough.
  11. When finished rolling, you can make the pizza bigger by pressing the dough out with your hands.
  12. To make your pizza thicker, cut out its shape and let it rise for a while longer.
  13. Preheat the oven to 225 ° C (435 ° F).
  14. Place the dough on a tray and add your favorite toppings.
  15. Bake in the oven for about 20 minutes.

Bread Recipe with Pasta Fresca

Ingredients
  • 2 3/4 flour (500 gr).
  • 1 1/2 tablespoon (15 gr).
  • 1/4 cup oil (to taste).
  • 1 teaspoon salt.
  • 1 cup of warm water (250 ml).
  • 1 pinch of sugar.

  7. When it’s done rising, put it back in the mixer and knead for 4-5 more minutes.
  8. Remove it, work the bread into the desired shape and let it rise for about one and a half hours.
  9. Preheat the oven to 220 ° C.
  10. Bake the bread for 20-40 minutes, depending on its shape (the bigger the bread, the longer the baking time), until the crust is golden brown.
  11. After 20 minutes, check the bread occasionally by testing it with a wooden skewer or cake tester: if the skewer comes out dry, the bread is done; otherwise, bake it a little while longer.
  12. Once the bread is done, remove it from the oven and cover it with a cotton dish towel to keep it soft.

If you want to make Wholemeal Bread with the Pasta Fresca you just have to follow the above Bread Recipe with the Pasta Fresca and just replace the flour with wholemeal flour!

Cookie Recipe with Pasta Fresca

Ingredients
  • 500 gr floour.
  • 250 gr sugar.
  • 250 gr butter or margarine, melted in bain-marie.
  • 1 pinch of salt.
  • 1 cup of milk.
  • 3 egg yolks.
Cookie Recipe with the Pasta Fresca Marcato
  1. Mix the egg yolks with the sugar.
  2. Add the melted butter and the milk.
  3. Pour the yolk mixture and flour into the mixer and add the salt and any optional flavorings.
  4. Close the lid, turn the Pasta Fresca ON and allow it to knead for 12-15 minute.
  5. The resulting dough should be smooth and soft.
  6. Preheat oven to 180 ° C (350 ° F) and prepare a greased baking sheet. We do not recommend using parchment paper to line the baking sheet.
  7. Use the Marcato Biscuit Maker (cookie press) to create the desired cookie shape. The Marcato Biscuit Maker can create up to 20 different shapes of cookies.
  8. Arrange the cookies onto the pre-greased baking sheet.
  9. Bake for about 20 minutes or until golden.
  10. Remove tray from oven and allow cookies to cool before removing from tray or decorating (if desired).

Useful Tips

  • Mix soft-wheat and durum wheat flour for tastier mixtures.
  • When using the Pasta Fresca for the first time, clean it with a damp cloth.
  • Clean the rollers of the accessories by feeding a little dough through them, which will then be discarded.
  • Extract the dough more easily after processing by stopping the Pasta Fresca when the dough is at the top of the bowl.
  • Every three complete machining cycles (kneading-sheeting-extrusion) a 10 minutes break with the machine turned off and the lid open is required.

Care and Maintenance

Only a few precautions are required for Pasta Fresca to last a long time.

  • Never wash the Pasta Fresca and accessories with water or in the dishwasher.
  • Unplug the power cord before performing maintenance.
  • Clean the Pasta Fresca after use with a cloth.
  • Any repairs must be performed by skilled personnel.
  • For proper storage, we recommend placing the machine and its accessories inside their boxes.
